Easy Rawnola with Oats and Dates

Ingredients

  • 1/2 cup unsweetened shredded coconut
  • 1 1/2 cups instant oats
  • 1 cup Medjool dates pitted
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons unsweetened almond, coconut or cashew milk

Preparation

  1. Add dates to a food processor and blend until they form a chunky paste.

  2. Add remaining ingredients and pulse until just combined. Feel free to start with less milk and add until it reaches your desired consistency.

  3. Enjoy immediately!

  4. Store leftover rawnola in a tightly sealed container in the refrigerator for up to 1 week, if milk of choice was fresh when you made it.

  5. Note: Unless you have a wide-base Vitamix or Blendtec, do not attempt this in a blender as it may turn to complete mush.
