Vegan Gluten Free Protein Pancakes

Ingredients

  • 20g (1/4 cup) ground almonds
  • 1 scoop of @missfitsnutrition vanilla vegan protein
  • 2 Tbsp coconut flour
  • 1 tsp baking powder
  • 1 tsp coconut sugar
  • 1 flax egg (1 tbsp flaxseeds + 2.5 tbsp water)
  • 1/2 tsp cinnamon
  • 30ml almond milk
  • 1 tbsp coconut oil

Preparation

  1. Mix together the flaxseed mixture (1 tbsp flaxseeds and 2.5 tbsp water) and let it thicken for 5 minutes.

  2. Add the remaining ingredients to the flaxseed mixture and mix well.

  3. Fry the batter in a tablespoon of coconut oil.

  4. Serve the pancakes, optionally topped with coconut yoghurt, frozen berries, and a sprinkling of granola.
