Vegan Gluten Free Protein Pancakes
Ingredients
- 20g (1/4 cup) ground almonds
- 1 scoop of @missfitsnutrition vanilla vegan protein
- 2 Tbsp coconut flour
- 1 tsp baking powder
- 1 tsp coconut sugar
- 1 flax egg (1 tbsp flaxseeds + 2.5 tbsp water)
- 1/2 tsp cinnamon
- 30ml almond milk
- 1 tbsp coconut oil
Preparation
Mix together the flaxseed mixture (1 tbsp flaxseeds and 2.5 tbsp water) and let it thicken for 5 minutes.
Add the remaining ingredients to the flaxseed mixture and mix well.
Fry the batter in a tablespoon of coconut oil.
Serve the pancakes, optionally topped with coconut yoghurt, frozen berries, and a sprinkling of granola.
