Chocolate Dipped Raspberry Mint Popsicles

Ingredients

  • 1 cup water
  • 1 cup fresh mint, packed
  • 2 cups frozen raspberries
  • 1 small diced apple with skin
  • 1 1/2 cups unsweetened vegan yogurt
  • 1/4 cup maple syrup

Optional

  • 1 teaspoon mint extract (alternative to fresh mint)
  • Dark chocolate for dipping

Preparation

  1. Bring water to a boil and add mint leaves, cover, and let sit for 15-20 minutes, then strain out the leaves.

  2. Add frozen raspberries and diced apple to the mint water, bring to a simmer, cover, turn heat to low, and cook for 10 minutes, then puree the mixture.

  3. In a separate bowl, whisk together unsweetened vegan yogurt and maple syrup.

  4. Swirl in the raspberry puree, fill popsicle molds, and freeze overnight.

  5. Optionally, dip the frozen popsicles in melted dark chocolate.
