Chocolate Dipped Raspberry Mint Popsicles
Ingredients
- 1 cup water
- 1 cup fresh mint, packed
- 2 cups frozen raspberries
- 1 small diced apple with skin
- 1 1/2 cups unsweetened vegan yogurt
- 1/4 cup maple syrup
Optional
- 1 teaspoon mint extract (alternative to fresh mint)
- Dark chocolate for dipping
Preparation
Bring water to a boil and add mint leaves, cover, and let sit for 15-20 minutes, then strain out the leaves.
Add frozen raspberries and diced apple to the mint water, bring to a simmer, cover, turn heat to low, and cook for 10 minutes, then puree the mixture.
In a separate bowl, whisk together unsweetened vegan yogurt and maple syrup.
Swirl in the raspberry puree, fill popsicle molds, and freeze overnight.
Optionally, dip the frozen popsicles in melted dark chocolate.
