Spoonable Cookie Dough Snack for Bentos

Ingredients

  • 3/4 cups raw cashews
  • 1/3 cup oat flour
  • 1 1/2 cups soft pitted medjool dates
  • 1 tsp vanilla extract
  • 1/2 cup non-dairy chocolate chips

Preparation

  1. Add cashews to the food processor and process until they form a fine flour.

  2. Add oat flour, dates, and vanilla and process again until dough forms.

  3. Put dough in bowl and mix in chocolate chips.

  4. Use a tablespoon or cookie scoop to portion.

  5. Place in fridge to chill.

  6. Store in fridge or freezer and enjoy.
