Blueberry Coconut Yoghurt Smoothie Pot
Ingredients
- Chia and hemp granola
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- Plant-based milk
- 2 dessert spoons coconut yoghurt
- 1/2 cup blueberries
- 1 teaspoon lucuma powder
- 1/2 teaspoon beetroot powder
Toppings
- Cacao nibs
- Additional granola
- Blueberries
- Dark chocolate buttons
- Chocolate shot
- Coconut chips
Preparation
Soak 1 tablespoon of chia seeds and 1 teaspoon of vanilla extract in plant-based milk for desired time.
Add 2 dessert spoons of coconut yoghurt, 1/2 cup of blueberries, 1 teaspoon of lucuma powder, and 1/2 teaspoon of beetroot powder to the soaked mixture.
Blend all ingredients together until smooth.
Layer chia and hemp granola at the bottom of a pot or bowl
Pour the blended smoothie over the granola layer.
Sprinkle with cacao nibs, additional granola, blueberries, dark chocolate buttons, chocolate shot, and coconut chips.
