Peanut Butter Rice Crispy Treats
Ingredients
- 120g smooth peanut butter
- 250g puffed rice
- 90g melted coconut oil
- 59g salted almonds (or plain almonds and add 1 tsp salt)
- 140g dark chocolate
Preparation
Line a 9x9 brownie tin with parchment paper.
Mix together the peanut butter and the coconut oil, then add the puffed rice and almonds.
Pour the mixture into the lined tin and pat down to create an even layer.
Cover with cling film and put in the freezer.
Meanwhile, using a bain marie, melt the chocolate.
Once the chocolate is melted, take out the tin from the freezer.
Pour the chocolate on top and spread it to create an even layer.
Cover again and put the whole thing back in the freezer for 30 minutes.
Slice into bars and enjoy.
