Vegan Cookie Dough Bars

Ingredients

  • 1 cup oat flour (just oats ground in a blender to form a flour)
  • 3/4 cup almond flour
  • 1/2 cup smooth nut butter of choice
  • 1/2 cup vegan butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips (you can leave this out and just have the chocolate topping!)

Topping

  • 3/4 cup vegan dark chocolate
  • 2 tbsp vegan butter
  • Pinch flaky salt (optional)

Preparation

  1. Mix together the butter, nut butter maple and vanilla until smooth.

  2. Stir in the ground almonds and oat flour, then fold in the chocolate chips.

  3. Press into the bottom of a lined loaf tin and melt together the dark chocolate and vegan butter, then pour this on top.

  4. Top with a sprinkle of flaky salt if you wish!

  5. Store in an airtight container in the fridge.
