Baked Cheesy Brocolli Bites

Ingredients

  • 2.5 cups uncooked broccoli florets
  • 2 eggs
  • 1/4 cup chopped spring onion (green bits only for low-fodmap)
  • 1/3 cup grated cheddar
  • 1/3 cup grated parmesan
  • 1/2 cup breadcrumbs
  • 2 tablespoons chopped parsley
  • 1.5 tsp ground paprika
  • salt and pepper to taste

Preparation

  1. Preheat oven to 200 degrees C

  2. Boil the broccoli over a medium heat for approx 2 mins

  3. Remove from the heat and shock with cold water to stop the cooking process

  4. Drain the broccoli and finely chop using a knife or food processor

  5. Add all ingredients to a bowl and mix thoroughly

  6. It should be a damp consistency to easily scoop up a tablespoon size of mixture and gently roll into a firm ball shape, with your hands

  7. Repeat with all the mix

  8. Place the rolled balls onto a lined or greased oven tray

  9. Place in oven for approx 20-25 mins or until beginning to golden

  10. Turn them over half way through cooking

  11. Remove from the oven and serve up with sweet chilli sauce for dipping
