Beetroot Brownies

Ingredients

  • 50g vegan margarine ⁠
  • 50g light brown sugar⁠
  • 3 flax eggs⁠
  • 1 tbsp vanilla extract ⁠beetroot puree
  • 75g dark chocolate⁠
  • pinch of salt⁠

Preparation

  1. Combine vegan margarine and brown sugar in a bowl

  2. Add flax eggs, vanilla extract and beetroot puree and stir

  3. Add in the dry ingredients, sifted, and combine

  4. Add in 75g (2.6 oz) dark chocolate and a pinch of salt and combine

  5. In a greased oven safe tin, add in half of the brownie batter, layer with another 75g (2.6 oz) dark chocolate, and finely the other half of the batter

  6. Bake at 180C/356F fan for 45 min

  7. Before serving, add the beetroot icing, cut in squares and enjoy
