Beetroot Brownies
Ingredients
- 50g vegan margarine
- 50g light brown sugar
- 3 flax eggs
- 1 tbsp vanilla extract beetroot puree
- 75g dark chocolate
- pinch of salt
Preparation
Combine vegan margarine and brown sugar in a bowl
Add flax eggs, vanilla extract and beetroot puree and stir
Add in the dry ingredients, sifted, and combine
Add in 75g (2.6 oz) dark chocolate and a pinch of salt and combine
In a greased oven safe tin, add in half of the brownie batter, layer with another 75g (2.6 oz) dark chocolate, and finely the other half of the batter
Bake at 180C/356F fan for 45 min
Before serving, add the beetroot icing, cut in squares and enjoy
