Beloved Protein Pumpkin Cookies
Ingredients
- 90 grams pumpkin puree
- 50 grams egg whites
- 4 grams sugar-free pudding mix
- 26 grams 1st Phorm Level-1 protein
- Droplets of liquid vanilla stevia or stevia/sweetener packet
- 2 teaspoons baking powder
Optional add-ins
- 5 grams hiitnutrition black cocoa (for Oreo-like flavor)
Preparation
Mix all ingredients together until the mixture is thick like pancake batter but not too runny
Let the mixture sit for 5-10 minutes to thicken, while the oven preheats; line a baking sheet with parchment paper and spray with coconut oil spray.
If spraying the pan before adding the paper, it helps it stick down and stay in place.
Use a spoon or a watermelon scooper to form 6 perfect, round cookies.
Bake at 350°F for 11-12 minutes.
Let the cookies cool completely before storing them in the fridge; they are great for meal prep and can be topped with nut butter for best results.
