Beloved Protein Pumpkin Cookies

Ingredients

  • 90 grams pumpkin puree
  • 50 grams egg whites
  • 4 grams sugar-free pudding mix
  • 26 grams 1st Phorm Level-1 protein
  • Droplets of liquid vanilla stevia or stevia/sweetener packet
  • 2 teaspoons baking powder

Optional add-ins

  • 5 grams hiitnutrition black cocoa (for Oreo-like flavor)

Preparation

  1. Mix all ingredients together until the mixture is thick like pancake batter but not too runny

  2. Let the mixture sit for 5-10 minutes to thicken, while the oven preheats; line a baking sheet with parchment paper and spray with coconut oil spray.

  3. If spraying the pan before adding the paper, it helps it stick down and stay in place.

  4. Use a spoon or a watermelon scooper to form 6 perfect, round cookies.

  5. Bake at 350°F for 11-12 minutes.

  6. Let the cookies cool completely before storing them in the fridge; they are great for meal prep and can be topped with nut butter for best results.
