Birthday Pancake Stack

Ingredients

  • half a mashed banana
  • 1 egg
  • 1 tbsp pumpkin puree
  • 4 tbsp egg whites (or use almond milk/ extra egg)
  • 1/2 tsp pumpkin spice
  • 1/2 baking powder
  • 20g oats
  • 15g protein powder
  • oil spray

Preparation

  1. Simply mix all the above ingredients except the toppings in a bowl

  2. Spray a frying pan with oil spray (i used coconut oil)

  3. Fry the mix in batches until lightly golden on each side

  4. I used around 2 tbsp per pancake

  5. Once you have your stack simply top with whatever toppings you want and enjoy!
