Chewy Gluten-Free Pumpkin Cookies

Ingredients

  • 1 1/2 cups oat flour
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • Sprinkle of Himalayan pink salt
  • 1/4 cup pumpkin purée
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 1/4 cup agave
  • White chocolate chunks for topping

Preparation

  1. Preheat oven to 350F.

  2. In a medium sized bowl, whisk together the dry ingredients and in a small bowl whisk together the wet ingredients.

  3. Pour the wet into the dry, and stir until well combined.

  4. Use two spoons to make little dough balls on a baking sheet, top with chocolate, and bake for 8 minutes.
