Chewy Gluten-Free Pumpkin Cookies
Ingredients
- 1 1/2 cups oat flour
- 1 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- Sprinkle of Himalayan pink salt
- 1/4 cup pumpkin purée
- 1/4 cup unsweetened applesauce
- 1 egg
- 1/4 cup agave
- White chocolate chunks for topping
Preparation
Preheat oven to 350F.
In a medium sized bowl, whisk together the dry ingredients and in a small bowl whisk together the wet ingredients.
Pour the wet into the dry, and stir until well combined.
Use two spoons to make little dough balls on a baking sheet, top with chocolate, and bake for 8 minutes.
