Cherry Tart with Almond Filling
Ingredients
- 1 1/4 cups flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/2 cup soft butter
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/3 cup cherry jam
Filling
- 1 cup almonds
- 2/3 cup sugar
- 1/2 cup soft butter
- 1/2 teaspoon almond extract
- 2 large eggs
Preparation
Set the middle wire rack in the oven and preheat to 180 degrees.
Prepare a 9-inch tart pan with removable bottom.
In a food processor with metal blade, add flour, sugar, baking powder, and butter, then run on medium speed until mixture resembles breadcrumbs.
Add egg and vanilla, then run on pulse until dough forms.
Place dough in the pan and press to cover bottom and sides, spread cherry jam over it, and chill in the refrigerator for 30 minutes.
For the filling, in a food processor add almonds, sugar, butter, almond extract, and eggs, then run on medium speed until smooth, and spread the mixture over the dough in the pan.
Place the pan in the oven and bake for 30 to 35 minutes until the tart is golden brown.
Remove the tart from the oven and cool on a wire rack before serving.
