Coffee Walnut Protein Muffins

Ingredients

  • 120g wholemeal flour
  • 2 scoops coffee protein powder
  • 5g baking powder
  • 1 chia egg
  • 3/4 cup almond milk
  • 25g walnuts

Preparation

  1. Preheat oven to 180°C

  2. Mix dry ingredients together in a bowl: wholemeal flour, coffee protein powder, and baking powder

  3. Prepare the chia egg according to standard method

  4. In another bowl, combine wet ingredients: chia egg and almond milk

  5. Combine wet and dry mixtures until well blended

  6. Fold in the walnuts

  7. Divide batter into 6 muffin cups or liners

  8. Bake for 15 minutes at 180°C
