Coffee Walnut Protein Muffins
Ingredients
- 120g wholemeal flour
- 2 scoops coffee protein powder
- 5g baking powder
- 1 chia egg
- 3/4 cup almond milk
- 25g walnuts
Preparation
Preheat oven to 180°C
Mix dry ingredients together in a bowl: wholemeal flour, coffee protein powder, and baking powder
Prepare the chia egg according to standard method
In another bowl, combine wet ingredients: chia egg and almond milk
Combine wet and dry mixtures until well blended
Fold in the walnuts
Divide batter into 6 muffin cups or liners
Bake for 15 minutes at 180°C
