Healthy Banana Protein Muffins with Oats

Ingredients

  • 1/2 cup Gf oats - blended into powder
  • 1/2 cup oats full (not blended)
  • 1 large mashed banana (firm)
  • 2 Scoops low FODMAP protein powder
  • 1/2 cup almond milk
  • 1 chia egg
  • 3 tbsp coconut oil
  • 2 tsp gf baking powder
  • 1 tsp cinnamon
  • 1/2 cup crushed walnuts

Preparation

  1. Choose firm bananas and mash them with a bit of warm water using a fork.

  2. Combine all wet ingredients and all dry ingredients separately.

  3. Slowly fold them together without overmixing; if the mixture is too dry, add a little more almond milk.

  4. Bake in muffin liners for 20-25 minutes in a 180 degree fan forced oven.

  5. Enjoy.
