Healthy Banana Protein Muffins with Oats
Ingredients
- 1/2 cup Gf oats - blended into powder
- 1/2 cup oats full (not blended)
- 1 large mashed banana (firm)
- 2 Scoops low FODMAP protein powder
- 1/2 cup almond milk
- 1 chia egg
- 3 tbsp coconut oil
- 2 tsp gf baking powder
- 1 tsp cinnamon
- 1/2 cup crushed walnuts
Preparation
Choose firm bananas and mash them with a bit of warm water using a fork.
Combine all wet ingredients and all dry ingredients separately.
Slowly fold them together without overmixing; if the mixture is too dry, add a little more almond milk.
Bake in muffin liners for 20-25 minutes in a 180 degree fan forced oven.
