  • 750g wholemeal spelt flour
  • 4 tbs baking powder
  • 1 tsp salt
  • 1/2 cup coconut sugar
  • 1 cup sunflower seeds
  • 1 cup shredded coconut
  • 1 cup cranberries
  • 2 cups raw fruit muesli
  • 400g melted butter
  • 2 cups buttermilk
  • 1/2 cup honey
  • 2 large eggs

Preparation

  1. Preheat the oven to 180C and grease and line a large baking sheet with parchment paper

  2. Whisk the flour, baking powder, salt, brown sugar, sunflower seeds, coconut, cranberries and muesli together in a large bowl. Mix the melted butter, honey and buttermilk together. Add the beaten eggs and mix well

  3. Add to the dry ingredients and mix to make a firm dough

  4. Press the dough into the baking tray. Bake for about 40 minutes and then remove from the oven and cool before slicing. Spread the rusks on two baking sheets, well separated, and pop them back into the oven

  5. Dry out in the oven at 60C for about 4 hours, turning the rusks every hour
