Healthy Homemade Fig Newtons

Ingredients

Crust

  • 2 cups oat flour
  • 2 medium ripe bananas
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Fig filling

  • 13 dried figs
  • 1/4 cup water

Preparation

  1. Preheat your oven to 350°F.

  2. In a large mixing bowl, mash your ripe bananas until smooth, add in the rest of your crust ingredients and mix until it forms a dough like consistency, being patient as it may look rough at first and using your hands if necessary, then split the dough ball into two chunks.

  3. To make your fig filling, add your dried figs into a food processor and pulse, then add in your 1/4 cup water and blend again until you get a thick paste.

  4. Take one of the dough balls and press it into a lined baking dish, then do the same with the other dough ball so you have two crusts.

  5. Spoon the fig paste onto one of the crust layers, put the other crust on top and press gently to seal all the layers together.

  6. Bake in the oven for 25-30 minutes, allow it to cool for about 10 minutes before slicing and enjoy.
