Super Easy Vegan Banana Bread
Ingredients
- 2 cups rolled oats
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 3 small/medium or 2 large ripe bananas
- 1/4 cup coconut oil, melted
- 1/2 cup unsweetened plant milk
- 1 tsp vanilla extract
Preparation
Process the oats in a food processor or blender until you reach flour consistency.
In a large bowl mix ground oats, baking powder, cinnamon and salt.
In a smaller bowl mash bananas with a fork, add coconut oil, milk and vanilla and mix together.
Pour wet ingredients to the bowl with dry ingredients, mix to combine (don't overmix).
Transfer to a small (18cm) loaf tin lined with parchment paper.
You can top it with chocolate chips.
Bake in 180C for about 40 minutes.
Cool on a cooling rack.
