Super Easy Vegan Banana Bread

Ingredients

  • 2 cups rolled oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3 small/medium or 2 large ripe bananas
  • 1/4 cup coconut oil, melted
  • 1/2 cup unsweetened plant milk
  • 1 tsp vanilla extract

Preparation

  1. Process the oats in a food processor or blender until you reach flour consistency.

  2. In a large bowl mix ground oats, baking powder, cinnamon and salt.

  3. In a smaller bowl mash bananas with a fork, add coconut oil, milk and vanilla and mix together.

  4. Pour wet ingredients to the bowl with dry ingredients, mix to combine (don't overmix).

  5. Transfer to a small (18cm) loaf tin lined with parchment paper.

  6. You can top it with chocolate chips.

  7. Bake in 180C for about 40 minutes.

  8. Cool on a cooling rack.
