Homemade Overnight Yeasted Chocolate Waffles
Ingredients
- 2 cups all-purpose flour
- 1/2 cup melted Earth Balance
- 2 tsp instant yeast
- 2 1/2 cups Oat Yeah
- 1 Tbsp sugar
- 1/4 cup cocoa powder
- 1 tsp vanilla
- 1/2 tsp baking powder
- 2 Tbsp ground flax
- 4 Tbsp water
Preparation
Mix flour, yeast, melted butter, sugar, and milk in a glass or plastic bowl. Cover and let sit out overnight.
The morning of waffling, mix together the flax and water and let sit for 5 minutes.
Fold in the soaked flax, cocoa powder, vanilla, and baking powder.
Cook and fill based on your waffle iron's recommendations.
Top with homemade cashew butter, fresh berries, and maple syrup for serving.
Note that butter is necessary as it helps relax the gluten and create a crisp, fluffy texture.
