Spiced Chocolate Chip Cookies
Ingredients
- 1 1/4 cup wholemeal flour (or regular flour)
- 2 flax seed eggs
- 1/2 cup butter (or vegan butter), softened
- 2/3 cup brown sugar
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp nutmeg
- 1/2 cup chocolate chips
Preparation
Preheat the oven to 180 degrees celsius and line a baking tray with baking paper
Mix the ground flax seeds in 6tbsp of water and let sit for 5 minutes until it turns into a gel-like texture
Mix the sugar and butter together until combined
Add the flax eggs, and vanilla extract and mix again
Combine dry ingredients together in a bowl
Slowly add the dry ingredients to the wet mix until well combined
Fold in the chocolate chips
Cover the bowl with cling film and refrigerate for 15 minutes
Use a cookie scoop or a spoon to scoop tablespoons of the dough onto the baking sheets and leave 1-2 inches between each cookie
Bake for 10 minutes
