Spiced Chocolate Chip Cookies

Ingredients

  • 1 1/4 cup wholemeal flour (or regular flour)
  • 2 flax seed eggs
  • 1/2 cup butter (or vegan butter), softened
  • 2/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 cup chocolate chips

Preparation

  1. Preheat the oven to 180 degrees celsius and line a baking tray with baking paper

  2. Mix the ground flax seeds in 6tbsp of water and let sit for 5 minutes until it turns into a gel-like texture

  3. Mix the sugar and butter together until combined

  4. Add the flax eggs, and vanilla extract and mix again

  5. Combine dry ingredients together in a bowl

  6. Slowly add the dry ingredients to the wet mix until well combined

  7. Fold in the chocolate chips

  8. Cover the bowl with cling film and refrigerate for 15 minutes

  9. Use a cookie scoop or a spoon to scoop tablespoons of the dough onto the baking sheets and leave 1-2 inches between each cookie

  10. Bake for 10 minutes
