summer roasted veg
Ingredients
- 3 carrots
- 1/2 Brokkoli
- 6 garlic cloves
- 1 zucchini
- 1 red onion
- 3 handful fresh rosemary
- 2 Sweetpotatoes
- 2 beetroots
- Olive oil
- salt, pepper
- Salt, Pepper
- 2tb Olive oil
- Juice of 1 lemon
- 6tb tahini
- 6tb water
- Handful cilantro
Preparation
Preheat the oven to 200degrees two sided heat
Chop all veggies in chunky pieces (leave garlics whole)
Place all on a baking tray
Top with olive oil, salt and pepper and rosemary
Bake veggies for 30-45minutes
Chop cilantro and mix with all sauce ingredients
