Vegan Chocolate Bread with Avocado Frosting
Ingredients
- 2 bananas
- 3 flax seed eggs
- 3/4 cup cacao powder
- 1 tsp vanilla essence
- 1 tsp baking powder
- 1/2 cup plant milk (hazelnut milk used)
- 1 cup wholemeal flour
Frosting
- 1 medium ripe avocado
- 100g dark chocolate (vegan)
- 3 tbsp hazelnut milk
Preparation
Preheat the oven to 180 degrees Celsius and line a 1lb bread tin with coconut oil or baking paper.
In a bowl, combine the mashed bananas, flax seed eggs, vanilla essence, plant milk, and baking powder.
Add the cacao powder and wholemeal flour, and stir until well combined. Pour the mixture into the prepared tin and bake for 30-40 minutes until a knife comes out clean.
Set aside to cool.
Frosting
Cut into the avocado, spoon it out and mash it (it's fine to be lumpy) and place in a food processor.
Add the melted dark chocolate and the hazelnut milk to the food processor and blitz on high speed. Scrape down the sides as you go along, then pulse until the mix is smooth.
Only cover the bread with the frosting once the bread is completely cool! Sprinkle with hazelnuts (optional) and enjoy!
