Zebra Cake with Vanilla and Chocolate Layers

Ingredients

  • 5 egg yolks
  • 1 whole egg
  • 60 grams oil
  • 80 grams milk
  • 75 grams flour
  • 1 teaspoon baking powder
  • 1 packet vanilla sugar
  • 5 egg whites
  • 75 grams granulated sugar

Cocoa mixture

  • 10 grams cocoa powder
  • 30 ml hot water

Preparation

  1. Start by whisking 5 egg yolks and 1 whole egg.

  2. Add 60 grams of oil and mix well.

  3. Add 80 grams of milk and mix.

  4. Add 75 grams of flour and mix.

  5. Add 1 teaspoon of baking powder and 1 packet of vanilla sugar, then mix thoroughly.

  6. In a separate bowl, whip 5 egg whites with 75 grams of granulated sugar until stiff peaks form.

  7. Gently fold the egg white mixture into the yolk mixture from bottom to top without deflating it.

  8. For the cocoa part, mix the cocoa powder with hot water.

  9. Add the cocoa mixture to half of the batter and stir to combine.

  10. Line the bottom of a springform pan with parchment paper.

  11. Spoon 4 tablespoons of vanilla batter into the center of the pan, then add 4 tablespoons of chocolate batter on top, and continue alternating until all batter is used.

  12. Bake in a preheated oven at 150°C for 50 to 60 minutes.

  13. After baking, invert the cake and let it cool completely before slicing.

Tips

  1. Do not slice the cake until it has cooled completely to avoid breaking it.
