Cherry Cake with Cream Cheese
Ingredients
Cream cheese
- 150 grams low-salt cream cheese
- 1 egg
- 4 tablespoons sugar
- a little vanilla
Cake batter
- 3 eggs
- 260 grams flour
- 140 grams sugar
- 140 grams oil
- 100 grams milk
- 0.5 teaspoon vanilla
- 2 teaspoons baking powder
- pitted cherries as needed
Preparation
First, prepare the cream cheese mixture by mixing cream cheese, egg, sugar, and vanilla together until it becomes creamy.
For the cake, beat eggs, sugar, and vanilla with a mixer on medium speed for five minutes until creamy and stretchy.
Add milk and oil to the mixture and stir just until combined.
Sift the flour and baking powder, then add them to the wet ingredients in two stages, mixing gently with a hand mixer.
Mix the pitted cherries with one tablespoon of flour.
Assemble the cake by pouring a layer of batter into the prepared mold, arranging a layer of cherries on top, then spooning the cream cheese mixture over it, and finally adding more cherries on top.
Place the cake in a preheated oven at 180°C for gas, 170°C for electric, or 160°C for toaster oven and bake for 50 to 55 minutes.
Do not open the oven door for the first 30 minutes of baking.
Test the cake with a toothpick; if it comes out clean, the cake is done.
