Lemon Chia Seed Cupcake
Ingredients
- 2 eggs
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1.5 teaspoons lemon zest
- 1/4 cup oil
- 1/2 cup cold milk
- 3 tablespoons lemon juice
- 1 cup flour
- 1 teaspoon baking powder
- 1.5 teaspoons chia seeds
Preparation
Make buttermilk by pouring lemon juice over milk and let it sit for a few minutes until it curdles and becomes yogurt-like.
In the meantime, beat eggs, sugar, vanilla, and lemon zest with a mixer until light, creamy, and voluminous.
Add oil and mix until just combined.
Add the buttermilk and mix until just combined.
Add 2 tablespoons of lemon juice and mix.
Add the sifted mixture of flour and baking powder and gently stir to avoid deflating the batter.
Stir in the chia seeds.
Pour the batter into cupcake liners.
Bake in a preheated oven at 170 degrees Celsius until a toothpick comes out clean.
