Gluten-Free Plant-Based Blondie Bites
Ingredients
- 1 mashed banana
- 1/2 cup cooked mashed sweet potato (about half of a medium sweet potato)
- 1/4 cup maple syrup
- 2 tablespoons almond flour
- 1/2 cup nut butter
- 1 1/2 tablespoons vanilla protein powder
Preparation
Preheat oven to 350°F.
In a bowl, mix together the mashed banana, cooked mashed sweet potato, maple syrup, almond flour, nut butter, and vanilla protein powder until well combined.
Line a brownie pan with parchment paper.
Bake for 40 minutes.
Add sprinkles if desired.
Let cool completely before slicing into bites.
Tips
These bites are super fudgy, so bake longer for a firmer texture if preferred.
Store in the fridge for 4-5 days.
They do not have a strong banana or sweet potato taste.
