Gluten-Free Plant-Based Blondie Bites

Ingredients

  • 1 mashed banana
  • 1/2 cup cooked mashed sweet potato (about half of a medium sweet potato)
  • 1/4 cup maple syrup
  • 2 tablespoons almond flour
  • 1/2 cup nut butter
  • 1 1/2 tablespoons vanilla protein powder

Preparation

  1. Preheat oven to 350°F.

  2. In a bowl, mix together the mashed banana, cooked mashed sweet potato, maple syrup, almond flour, nut butter, and vanilla protein powder until well combined.

  3. Line a brownie pan with parchment paper.

  4. Bake for 40 minutes.

  5. Add sprinkles if desired.

  6. Let cool completely before slicing into bites.

Tips

  1. These bites are super fudgy, so bake longer for a firmer texture if preferred.

  2. Store in the fridge for 4-5 days.

  3. They do not have a strong banana or sweet potato taste.
