Roasted Honey and Harissa Cauliflower
Ingredients
- 1 large cauliflower
- 2 tbsp olive oil (divided)
- 1 - 2 tbsp harissa
- 1 tbsp honey
- Salt
- To serve: pine nuts, pomegranate seeds, chopped parsley
Preparation
Preheat the oven to 180°C (356°F).
Coat the cauliflower with 1 tbsp of olive oil and season it well with salt.
Roast the cauliflower florets for 20 - 30 minutes, depending on the size of the florets, until they start to turn golden.
While the cauliflower is roasting, mix harissa, honey, and the remaining 2nd tbsp of olive oil in a small bowl.
Once the cauliflower is lightly golden, remove it from the oven and add the honey-harissa mixture. Add a tablespoon of water to the bowl, mix it to gather any sauce, and add this mixture to the cauliflower. Mix to coat the cauliflower and return it to the oven for another ten minutes.
Sprinkle chopped parsley, pomegranate seeds, and pine nuts over the cauliflower before serving.
