Almond Butter Soba Noodles with Thai Flavors
Ingredients
- 1 roll soba noodles
- 1/2 cup frozen edamame
- 1/2 sliced bell pepper
- 1 large carrot, shaved into strips
- handful button mushrooms, diced
Almond butter sauce
- 1 tbsp almond butter
- 1 tsp ground ginger
- 1 tsp sesame oil
- 1 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp maple syrup
- garlic powder
- TJs umami seasoning
- sriracha
Preparation
Boil the soba noodles and add edamame 4 minutes before they are done.
Drain and rinse the noodles.
Return the noodles to the pot over medium heat, add bell pepper slices, and cook for 4 minutes until soft and charred.
Add mushrooms and cook for 3 minutes until they release water and shrink, then add carrot strips.
Meanwhile, make the sauce by whisking together all sauce ingredients, adding water to thin to desired consistency.
Mix the vegetables and noodles in a bowl with the sauce.
