Avocado Black Bean Quinoa Salad

Ingredients

  • 1 cup cooked quinoa
  • 1 can black beans, rinsed and drained
  • 1 avocado, chopped
  • 1 red pepper, chopped

Dressing

  • Juice of one lime
  • 1 tbsp avocado oil
  • 1/4 tsp garlic powder
  • A pinch of chilli powder
  • A pinch of salt & pepper

Preparation

  1. Combine all salad ingredients together.

  2. Whisk dressing ingredients and toss with salad.
