Black Bean Quinoa Chopped Salad
Ingredients
- 2 cups cooked quinoa
- 1 (15oz.) can of black beans, drained and rinsed or about 2 cups homemade cooked black beans
- 1 large green bell pepper
- 1 large red bell pepper
- 2 cups cherry tomatoes
- 1 small red onion
- a good handful of fresh parsley or cilantro leaves
- 1 large avocado
- 1 Tbsp extra virgin olive or avocado oil
- 3 Tbsp fresh lime juice
- 1/2 tsp ground cumin
- sea salt and fresh ground black pepper to taste (about 1/4 teaspoon each)
Preparation
In a large bowl, add all the ingredients and very gently stir to combine.
Serve this immediately or place in airtight containers and refrigerate.
