Blueberry and Vanilla Chia Pudding with Fruit Toppings
Ingredients
- 1/2 cup blueberries or 1 tbsp Berrylicious blend
- 1/2 cup coconut milk
- 1 tbsp agave syrup
- 2 tbsp coconut yoghurt
- 3 tbsp chia seeds
- 1 cup coconut milk
- 1 tsp vanilla bean paste
- 1 tbsp agave
- 2 tbsp coconut yoghurt
- 3 tbsp chia seeds
Preparation
Blend 1/2 cup blueberries or Berrylicious blend with 1/2 cup coconut milk and 1 tbsp agave syrup.
Add 2 tbsp coconut yoghurt to the mixture and combine well.
Add 3 tbsp chia seeds and set aside for at least 30 minutes, stirring until well combined.
For the vanilla layer, combine 1 cup coconut milk with 1 tsp vanilla bean paste, 1 tbsp agave, and 2 tbsp coconut yoghurt.
Add 3 tbsp chia seeds and set aside for at least 30 minutes, stirring until well combined.
Layer the blueberry and vanilla mixtures in a glass and top with cherries and figs.
