Blueberry and Vanilla Chia Pudding with Fruit Toppings

Ingredients

  • 1/2 cup blueberries or 1 tbsp Berrylicious blend
  • 1/2 cup coconut milk
  • 1 tbsp agave syrup
  • 2 tbsp coconut yoghurt
  • 3 tbsp chia seeds
  • 1 cup coconut milk
  • 1 tsp vanilla bean paste
  • 1 tbsp agave
  • 2 tbsp coconut yoghurt
  • 3 tbsp chia seeds

Preparation

  1. Blend 1/2 cup blueberries or Berrylicious blend with 1/2 cup coconut milk and 1 tbsp agave syrup.

  2. Add 2 tbsp coconut yoghurt to the mixture and combine well.

  3. Add 3 tbsp chia seeds and set aside for at least 30 minutes, stirring until well combined.

  4. For the vanilla layer, combine 1 cup coconut milk with 1 tsp vanilla bean paste, 1 tbsp agave, and 2 tbsp coconut yoghurt.

  5. Add 3 tbsp chia seeds and set aside for at least 30 minutes, stirring until well combined.

  6. Layer the blueberry and vanilla mixtures in a glass and top with cherries and figs.
