Carrot and Walnut Snack
Ingredients
- 1 teaspoon butter
- 3 medium carrots
- 1 cup gluten-free oat flour
- 2/3 cup coarsely chopped walnuts
- 1 teaspoon cinnamon
- 1 tablespoon honey
- 3-4 tablespoons coconut
Preparation
Melt the butter in a pan.
Add the grated carrots, gluten-free oat flour, and coarsely chopped walnuts, and stir to combine.
Cook for 3-4 minutes.
When almost cooked, add the cinnamon and honey.
Shape the mixture into balls and coat with coconut.
Notes
The original recipe used hazelnuts instead of walnuts.
