Carrot and Walnut Snack

Ingredients

  • 1 teaspoon butter
  • 3 medium carrots
  • 1 cup gluten-free oat flour
  • 2/3 cup coarsely chopped walnuts
  • 1 teaspoon cinnamon
  • 1 tablespoon honey
  • 3-4 tablespoons coconut

Preparation

  1. Melt the butter in a pan.

  2. Add the grated carrots, gluten-free oat flour, and coarsely chopped walnuts, and stir to combine.

  3. Cook for 3-4 minutes.

  4. When almost cooked, add the cinnamon and honey.

  5. Shape the mixture into balls and coat with coconut.

Notes

  1. The original recipe used hazelnuts instead of walnuts.
