Chargrilled Pepper Pesto
Ingredients
- 170g chargrilled peppers (i picked up a jar from aldi)
- a small handful of basil leaves
- 1/2 tsp chilli flakes (add more if you like spice!)
- 1 tsp black pepper
- optional) 1 tbsp tomato purée
- Cooked pasta
- 1 onion, chopped
- 3 large garlic cloves
Preparation
Add the onion to a pan and fry for five minutes
Add the following to a food processor or blender: 1 handful spinach, chargrilled peppers, garlic, basil, onion, chilli flakes, black pepper, (optional) tomato purée (this add a bit of colour too). Then process until mostly smooth.3. To the same pan you used earlier or the one used to coo
