Cinnamon Raisin Plum Porridge

Ingredients

  • 1 tsp coconut oil
  • 3-4 chopped plums
  • 50g raisins
  • 1 tbsp sugar or sugar alternative
  • 1 tsp cinnamon
  • 100g oats
  • 1 small grated courgette
  • 400-500ml almond or oat milk
  • 2 scoops vegan vanilla protein powder

Toppings

  • chocolate buttons
  • almond butter
  • vanilla coconut yoghurt
  • agave syrup
  • pomegranate

Preparation

  1. Heat 1 teaspoon coconut oil in a frying pan and add 3-4 chopped plums, 50 grams raisins, 1 tablespoon sugar or sugar alternative, and 1 teaspoon cinnamon, then fry for 5 minutes until sticky

  2. Cook 100 grams oats with 1 small grated courgette and 400-500 milliliters almond or oat milk until creamy

  3. Stir in 2 scoops vegan vanilla protein powder

  4. Top with chocolate buttons, almond butter, vanilla coconut yoghurt, agave syrup, and pomegranate
