Creamy Vegan Fettuccine Alfredo
Ingredients
- 1/4 onion
- 2 white potatoes
- 1/2 cup cashews
- 1 cup boiled water
- 1 tbsp Italian seasoning
- 1 tsp lemon juice
- 1 tsp salt
- 2-4 garlic cloves
- 12 oz fettuccine pasta
Preparation
Boil the potatoes until soft.
Cook the fettuccine pasta according to package instructions.
In a blender, combine the boiled potatoes, cashews, onion, garlic, lemon juice, salt, Italian seasoning, and boiled water; blend until smooth.
Heat the sauce in a saucepan over medium heat if desired.
Toss the cooked pasta with the sauce and serve.
