Creamy Vegan Fettuccine Alfredo

Ingredients

  • 1/4 onion
  • 2 white potatoes
  • 1/2 cup cashews
  • 1 cup boiled water
  • 1 tbsp Italian seasoning
  • 1 tsp lemon juice
  • 1 tsp salt
  • 2-4 garlic cloves
  • 12 oz fettuccine pasta

Preparation

  1. Boil the potatoes until soft.

  2. Cook the fettuccine pasta according to package instructions.

  3. In a blender, combine the boiled potatoes, cashews, onion, garlic, lemon juice, salt, Italian seasoning, and boiled water; blend until smooth.

  4. Heat the sauce in a saucepan over medium heat if desired.

  5. Toss the cooked pasta with the sauce and serve.
