Easy Tortilla Egg Wrap

Ingredients

  • 2 eggs
  • A fistful of arugula or spinach
  • 2 tablespoons feta cheese
  • Salt and pepper to taste
  • 1 gluten-free tortilla
  • 1 teaspoon olive oil

Preparation

  1. Whisk the eggs and season with salt and pepper.

  2. Add 1 teaspoon of olive oil to a nonstick pan and add the eggs.

  3. Cook fully on one side and flip.

  4. Place the tortilla on top and flip again.

  5. Fill the eggs with the arugula, feta cheese, or other desired fillings and fold like an omelette, then enjoy.

Tips

  1. For a vegan alternative, substitute the eggs with scrambled tofu.
