Gluten-Free Teff and Oat Pancakes
Ingredients
- 100 g oat flour
- 100 g teff flour
- 1 scoop of protein powder
- 1 tsp flax meal
- 1 tbs apple cider vinegar
- 300 ml of plant milk (almond milk recommended)
Preparation
Combine all ingredients in a bowl and whisk until smooth.
Fry in some coconut oil or a non-stick pan.
Serve with peanut butter, banana, and love.
Notes
Teff is an ancient seed not actually a grain, traditionally grown in Africa and used to make injera; it is gluten-free, nutritious, and has a robust, earthy flavor.
