Gluten-Free Teff and Oat Pancakes

Ingredients

  • 100 g oat flour
  • 100 g teff flour
  • 1 scoop of protein powder
  • 1 tsp flax meal
  • 1 tbs apple cider vinegar
  • 300 ml of plant milk (almond milk recommended)

Preparation

  1. Combine all ingredients in a bowl and whisk until smooth.

  2. Fry in some coconut oil or a non-stick pan.

  3. Serve with peanut butter, banana, and love.

Notes

  1. Teff is an ancient seed not actually a grain, traditionally grown in Africa and used to make injera; it is gluten-free, nutritious, and has a robust, earthy flavor.
