Thick and Fluffy Chocolate Chip Pancakes

Ingredients

  • 1/2 ripe banana, mashed
  • 1/2 tsp apple cider vinegar
  • 100 ml/ 1/2 cup plant milk
  • 60g/ 1/2 cup oat flour
  • 60g/ 1/2 cup buckwheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp dark chocolate chips

Preparation

  1. Mix all the ingredients together to form a batter.

  2. Heat a well-coated pan over medium heat.

  3. Pour the batter into the pan to form thick pancakes, avoiding spreading the dough too thin.

  4. Cook each pancake until bubbles form on the surface, then flip and cook the other side until golden brown.

  5. Repeat with the remaining batter to make about 6-7 pancakes.
