Malaysian Fruit Rojak
Ingredients
Fruits
- Pineapple
- Cucumber
- Water apple
- Jicama
- Mango
Sauce
- 20 dried chilies
- 1 cup sweet soy sauce
- 1 cup palm sugar
- 1/2 cup granulated sugar
- 3-inch shrimp paste
- 2 tablespoons cornstarch
Garnish
- Crushed peanuts
Preparation
Blend the dried chilies and shrimp paste with 1 cup of water until very fine.
Mix all the sauce ingredients except the cornstarch with another 1 cup of water.
Cook the mixture until it boils. Once boiling, add the cornstarch mixed with water and cook until the sauce thickens. Then, cool the sauce.
Cut the fruits into bite-sized pieces.
Pour the sauce over the fruits and sprinkle with crushed peanuts.
