Malaysian-Style Spiced Fried Chicken

Ingredients

  • Half chicken, cut as desired
  • 3 stalks lemongrass
  • 5 cloves garlic
  • 3 shallots
  • Thumb-sized piece of ginger
  • 1 teaspoon coriander powder
  • 1 teaspoon fennel powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (optional, add more for extra spice)
  • 2 teaspoons meat curry powder
  • A pinch of seasoning and salt
  • 1 sprig curry leaves
  • 1 teaspoon corn starch

Preparation

  1. Blend the lemongrass, garlic, shallots, and ginger into a smooth paste.

  2. Mix the paste with the chicken, coriander powder, fennel powder, turmeric powder, chili powder, meat curry powder, seasoning, salt, and corn starch until well combined.

  3. Marinate the mixture for at least 1 hour.

  4. Fry the chicken in hot oil until golden brown and cooked through.

  5. Fry the curry leaves until crisp and sprinkle over the fried chicken.
