Mamak Style Fried Chicken

Ingredients

  • 10 chicken drumsticks

Blended mixture

  • 2 inches ginger
  • 6 cloves garlic

Spices

  • 1/2 tablespoon coriander powder
  • 1/2 tablespoon cumin powder
  • 1 tablespoon chicken curry powder
  • 1 tablespoon turmeric powder
  • 2 tablespoons chili powder
  • 2 tablespoons salt
  • 1 tablespoon seasoning powder
  • 1 tablespoon rice flour
  • 1 tablespoon cornstarch
  • 1 egg (optional)
  • 2 sprigs curry leaves

Preparation

  1. Blend the ginger and garlic together.

  2. Mix the blended mixture and spices with the chicken.

  3. Marinate the chicken in the refrigerator for 30 minutes.

  4. Fry the chicken in plenty of oil until crispy, adding curry leaves while frying.

Tips

  1. For a thicker crust, add the egg and increase the rice flour and cornstarch slightly.
