Malaysian Wet Fried Noodles

Ingredients

  • Yellow noodles
  • 3 cloves garlic, smashed
  • Ground chili
  • Chicken, shrimp, squid, fishball (optional, as desired)
  • 2 tablespoons chili sauce
  • 1 tablespoon three-taste sauce or oyster sauce
  • Spicy soy sauce
  • Noodle soy sauce
  • Tamarind juice (half or quarter small bowl, mixed with hot water)
  • Mustard greens or other vegetables (as preferred)
  • Seasoning to taste, if desired

Preparation

  1. Sauté the garlic and ground chili until aromatic.

  2. Add the chicken, shrimp, squid, and other proteins.

  3. Add the three-taste sauce, chili sauce, and spicy soy sauce.

  4. Cook until the proteins are done.

  5. Add the noodles.

  6. Stir well, then add the vegetables, noodle soy sauce, tamarind juice, and seasoning if desired.

  7. After adding the liquid, stir briefly and immediately turn off the heat to prevent the noodles from overcooking.

Tips

  1. The dish is ready to serve.

  2. For better taste, squeeze lime over it and add preserved chili.
