Mango Avocado Edamame Bowls

Ingredients

  • Mango
  • Edamame
  • Purple Cabbage
  • Cilantro
  • Mint
  • Basil
  • Carrots
  • Avocado
  • Sesame Seeds
  • Red Bell Pepper
  • Cucumber
  • Konjac Rice
  • Squeeze of Lime

Chili sauce

  • 1 tsp Kee Chiu Chow (spicy chili oil)
  • 1 tsp sweet chili sauce
  • 1 tsp sriracha or sambal oelek

Preparation

  1. Add all ingredients to a bowl and squeeze 1/4 lime over the top.

  2. Mix the sauce ingredients in a bowl and adjust according to desired spice. Drizzle over the bowl and enjoy.

Notes

  1. This dish is ready in under 30 minutes.

  2. It can be served with jasmine rice or rice noodles instead of konjac rice.
