No-Bake Cinnamon Roll Cookies

Ingredients

  • 1 cup soaked medjool dates
  • 1 cup raw pecans
  • 2 Tbsp cinnamon sugar cookie mix (substitute: coconut sugar and cinnamon)
  • 1 Tbsp coconut oil
  • 1/2 cup almond flour
  • 12 raw pecans

Preparation

  1. Add all ingredients except the 12 pecans to food processor and process until you get a sticky dough

  2. With a small ice cream scoop, scoop out 12 balls

  3. Add a pecan to each one by gently pressing down on cookies

  4. Store in an airtight container in the freezer

  5. Enjoy straight out of the freezer or at room temperature
