No-Bake Cinnamon Roll Cookies
Ingredients
- 1 cup soaked medjool dates
- 1 cup raw pecans
- 2 Tbsp cinnamon sugar cookie mix (substitute: coconut sugar and cinnamon)
- 1 Tbsp coconut oil
- 1/2 cup almond flour
- 12 raw pecans
Preparation
Add all ingredients except the 12 pecans to food processor and process until you get a sticky dough
With a small ice cream scoop, scoop out 12 balls
Add a pecan to each one by gently pressing down on cookies
Store in an airtight container in the freezer
Enjoy straight out of the freezer or at room temperature
