No-Bake Lazy Cake by Manal

Ingredients

  • 3 cups milk
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons cornstarch
  • 2 tablespoons flour
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 60 plain biscuits

Preparation

  1. Prepare coffee cups or any preferred cups and line them with plastic wrap.

  2. In a medium heavy-bottomed saucepan, combine milk, cocoa powder, cornstarch, flour, sugar, and vanilla, and whisk by hand for a few seconds.

  3. Place the saucepan over medium heat and stir with a wooden spoon until the milk boils and the mixture thickens into a cocoa pudding, then continue stirring for a few minutes until smooth.

  4. In a large plastic bag, place the plain biscuits and use a meat mallet or similar tool to gently crush them until fine, then transfer to a deep bowl.

  5. Pour the pudding mixture over the crushed biscuits and stir with a wooden spoon until the biscuits absorb the pudding.

  6. Distribute the mixture into the plastic-lined cups, cover with plastic wrap, and refrigerate for several hours to set the lazy cake.

  7. To serve, remove the plastic wrap, place on a serving plate, and garnish as desired.
