Passion Fruit and Lemon Drink with Butterfly Pea Powder
Ingredients
- Pulp from 4 passionfruits
- Juice from 1 small lemon
- 40g or 2 tablespoons maple syrup
- 200ml coconut water
- 1/4 teaspoon butterfly pea powder
- Blue ice cubes (made beforehand by mixing water and butterfly pea powder)
Preparation
Add passionfruit pulp and lemon juice to a blender and pulse to separate the seeds. Strain mixture through a fine-mesh sieve. Add maple syrup and combine.
Make blue coconut water by adding butterfly pea powder.
Fill two tall glasses with blue ice cubes. Pour over the yellow passionfruit mixture and top with the blue coconut water. The blue will turn purple. Mix well and enjoy.
