Strawberry Shortcake Baked Oats

Ingredients

  • 1/2 cup oat flour (45g)
  • 2 tbsp plain or vanilla plant yogurt (55g)
  • 1/2 tsp baking powder and vanilla extract
  • Sweetener (e.g., stevia packet)
  • 1/2 cup plant milk
  • Chopped strawberries
  • 1 tbsp strawberry jam

Toppings

  • Strawberries
  • Splash of milk
  • Vegan whipped cream or yogurt

Preparation

  1. Preheat oven to 375°F

  2. Combine and mix all ingredients except for the jam

  3. Pour half of the mixture into a greased ramekin

  4. Place the jam into the center

  5. Cover it with the rest of the mixture

  6. Bake for 16-18 minutes

  7. Enjoy

Serving suggestions

  1. Top with fresh strawberries, a splash of milk for a hot and cold combo, and optionally vegan whipped cream or yogurt
