High-Protein Vanilla Oat Cupcakes
Ingredients
- 1/2 cup oats
- 1/2 cup oat flour
- 1 tsp baking powder
- 1 tsp flax seed meal
- 1 ripe, medium banana
- 1 tbsp protein powder from @unicornsuperfoods
- 1 tbsp nut butter of your choice
- 1 tsp maple syrup
- 1/2 cup plant milk
- 2 tbsp dark chocolate chips
Preparation
Preheat the oven to 180°C.
In a bowl, mash the banana with a fork.
Add peanut butter, syrup and plant milk, mix to combine.
Add oats, oat flour and baking powder.
Combine into smooth batter.
Divide between 2 ramekins.
Bake for about 20 minutes.
Serve warm, topped with a drizzle of peanut butter.

These cupcakes can be made quickly and are ideal for breakfast or as a snack.
