High-Protein Vanilla Oat Cupcakes

Ingredients

  • 1/2 cup oats
  • 1/2 cup oat flour
  • 1 tsp baking powder
  • 1 tsp flax seed meal
  • 1 ripe, medium banana
  • 1 tbsp protein powder from @unicornsuperfoods
  • 1 tbsp nut butter of your choice
  • 1 tsp maple syrup
  • 1/2 cup plant milk
  • 2 tbsp dark chocolate chips

Preparation

  1. Preheat the oven to 180°C.

  2. In a bowl, mash the banana with a fork.

  3. Add peanut butter, syrup and plant milk, mix to combine.

  4. Add oats, oat flour and baking powder.

  5. Combine into smooth batter.

  6. Divide between 2 ramekins.

  7. Bake for about 20 minutes.

  8. Serve warm, topped with a drizzle of peanut butter.
