Stuffed Eggplants with Cheese Gratin

Ingredients

  • 2 large eggplants
  • 4 chopped green onions or 1 large chopped onion
  • 2 chopped garlic cloves
  • Ground coriander to taste
  • Smoked paprika to taste
  • Turmeric to taste
  • Ground black pepper to taste
  • Mozzarella cheese as needed
  • Parmesan cheese or similar as needed
  • Olive oil

Preparation

  1. Cut the eggplants in half lengthwise, hollow them out, drizzle with olive oil, and bake in the oven at 200°C for about 20 minutes or until tender.

  2. Meanwhile, sauté the onion, garlic, and spices in olive oil for a few minutes.

  3. Add the cubed eggplant flesh and sauté until tender.

  4. Once the eggplant halves are baked, remove from oven, fill each with mozzarella cubes, some of the sautéed mixture, and top with parmesan cheese.

  5. Bake again until the cheese is gratified and serve.
