Sweet and Spicy Tofu Veggie Bowl

Ingredients

  • Lotus Foods forbidden rice or any black, white, or brown rice
  • extra firm tofu, pressed and sliced into desired shape
  • 2 tablespoons chili garlic paste
  • 1 teaspoon sriracha
  • 1 teaspoon raw agave or maple syrup
  • 1 teaspoon hot chili oil sauce (optional)
  • red bell pepper, sliced
  • avocado, sliced
  • cilantro, chopped
  • purple cabbage, chopped
  • cucumber, sliced
  • kale, chopped and massaged with lemon juice and extra virgin olive oil

Preparation

  1. Cook rice according to package directions.

  2. Heat 1 teaspoon extra virgin olive oil in a large cast iron skillet over low heat. Sear the tofu for 3-4 minutes per side until golden.

  3. Combine the sauce ingredients in a bowl and immediately toss with the hot tofu.

  4. Arrange the vegetables, rice, and tofu in a bowl. Add a squeeze of fresh lime juice and extra sauce if desired.
